[photopress:monday_meal_savings.jpg,full,pp_image] The end of the school year always puts me a little behind, so I haven’t kept up with my Monday Meal Savings, but now I am back on track.
This week, after looking at my Stop & Shop flyer, I decided to make barbecue chicken that can be made in the oven. Our weather has been very rainy this summer, and I want the option of cooking inside if necessary.
1 (1 1/2 lb.) package boneless, skinless chicken breasts (White Gem is on sale for $1.79 per pound) $2.68
4 strips thin bacon, cut in half (Stop & Shop Bacon, online special with Peapod $2.79) $.93
9 oz. ( 1/2 bottle) honey barbecue sauce (or your favorite flavor) (Kraft BBQ sauce is 10 for $10) $1.00
1 C. shredded cheddar cheese (Kraft Shredded Cheese, $2.50) $2.50
$7.11 price for meal!
Preheat the oven to 350°F.
Line a 9 x 13-inch baking dish with foil. Sprinkle chicken breasts with pepper to taste. Place 2 bacon strip halves horizontally to cover chicken breasts. Top with barbecue sauce and fold foil over to make a packet.
Bake for 20 minutes, or until chicken is just done. Increase heat to broil.
Open foil and broil until bacon crisps, 1 to 2 minutes. Top with cheese. Put back in oven and cook 1 to 2 minutes, or until cheese melts.
Makes 4 servings.

That recipe looks like a winner. It’s great to have a dish that can be cooked either indoors or on the grill.
