My sister is a much better cook than I am. She loves to try new recipes and when she says that she loves a recipe, I trust her. Her current favorite cake recipe is Auntie’s Buttermilk Cake. She has made a few modifications and here is the result:
INGREDIENTS
* 3/4 cup shortening
* 1 1/2 cups white sugar
* 2 3/4 cups cake flour
* 1/2 teaspoon salt
* 4 egg whites
* 1 teaspoon vanilla extract
* 1 tablespoon buttermilk
* 1 teaspoon baking powder
* 2 tablespoons coconut cream pudding mix (sis says it won’t make the cake taste like coconut)
* 1 1/2 cups buttermilk
* 1/4 C milk
* 1/2 teaspoon baking soda
* 1 teaspoon almond extract
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 1- 13 x9 inch square cake pan.
2. Cream shortening and sugar together and add 1 tablespoon buttermilk.
3. Sift flour three times and add baking powder, salt and pudding mix.
4. Combine 1 1/2 cups buttermilk, 1/4 cup milk with 1/2 teaspoon baking soda. Alternate adding buttermilk to shortening mixture with flour.
5. Beat egg whites until stiff and fold into batter. Stir in the vanilla and almond extracts. Pour batter into prepared pan.
6. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes.
After tasting this cake, I need to invest in an appetite suppressant to keep me from eating the whole thing! I am still waiting on her famous frosting recipe to make the cake a complete success. I will share when I get it!
