At the end of each school year, I search my brain (and the internet) for a simple and appropriate teacher appreciation gift for each of my children’s teachers. This year, my daughter’s teacher had a baby, so I made her a cute baby blanket before she left on maternity leave.

For the rest of the teachers, I decided to make them a yummy treat. I bought the store brand plastic containers with lids and had my daughter stamp a cute tag that we taped on the top. Then I made a batch of mint chocolate brownies. I cut the brownies into rectangles that would just fit into the storage containers. We gave one to each of the teachers and the secretaries and principal as well. I hope they enjoyed this yummy little treat!

Mint Chocolate Brownie Recipe

You can either make the brownies from scratch (recipe below) or buy a store bought brownie mix and follow those directions for the brownie part of the recipe.

Brownie:

1 C. melted butter
1/2 C. cocoa powder
2 C. sugar
4 eggs
1 1/2 C. flour




Mix butter, cocoa powder and sugar together. Add eggs and beat. Add flour and mix well. Spread into a greased 9 x 13 inch pan. Bake at 350 degrees for 25 minutes or until done. Cool completely.

Mint Frosting:

1/2 C. softened butter
1 lb. powdered sugar
1 – 5 Tsp. milk
1/2 tsp. mint extract
2 – 5 drops of green food coloring

Mix butter and powdered sugar together. Add milk, one tablespoon at a time, until the frosting is smooth but still thich. Add the mint extract and food coloring. Spread over brownie mix and refrigerate until firm.

Chocolate topping:

1 1/2 c. semi-sweet chocolate chips
1/2 C. butter

Put the chocolate chips and butter in a microwave safe bowl and microwave for 30 seconds at a time, stirring between each session, until chocolate is melted and smooth. Spread over mint frosting. Refrigerate until set and hardened (about 30 minutes).

Remove brownies from refrigerator and let sit for 10 minutes. Cut brownies into squares or rectangles. These brownies are very rich, so small squares are an appropriate serving size!
