Each Monday, I will post a meal that will cost your family under $10 for a family of four. The savings will be based on coupons and the Stop & Shop weekly circular. I realize that not all local grocery stores will offer the same savings this week, however, print off the meal and wait until your store does offer a similar discount.

Spanish Rice with Sausage

This meal is one of my family favorite meals.

  • Premio Italian Sausage (2 for $4 – buy two and save one for another meal or use both if you have a bigger family)
  • Spanish Rice A Roni ($3 for 5, plus print off the coupon from CouponMom.com to save $1.00 on three boxes, buy three and save two or use two boxes for the meal if you have a bigger family)
  • Hunt’s Diced Diced Tomatoes (14.5 oz. on sale for $1.20)
  • Cucumbers (4 for $3, use two)

Cook Sausage in a skillet (no oil necessary) until cooked through. Prepare rice according to directions (this includes adding the canned diced tomatoes). Add sausage before turning down heat and covering with lid. Simmer according to directions on the box.

Cut up cucumbers and leave plain, or marinate in red wine vinegar with salt and pepper.

Total meal cost:

Sausage $2.00
Rice A Roni $1.33
Canned Tomatoes $1.20
Cucumbers $1.50

Total: $6.03
