How do you get your kids to eat more vegetables? This is a question that plagues moms across the world! TwitterMoms recently introduced me to a recipe by Hidden Valley called Mock Mashed Potatoes. These aren’t really potatoes but mashed up cauliflower! Basically you steam the cauliflower, mash them to the consistency of mashed potatoes while adding Hidden Valley The Original Ranch Dressing Light, a tablespoon of butter or margarine, a tablespoon of milk and a little salt. I decided to spruce the mock potatoes up a bit by cooking four slices of bacon, grating 1/2 C of sharp cheddar cheese and slicing a few scallions. My kids put the mock potatoes on their plate and added the bacon, cheese and scallions on top. They thought it was a real treat! I didn’t tell them that there were not mashed potatoes and they loved the taste. They did, however, add a bit more salt.
